BREAKFAST BURRITO

 

Ingredients as follows:

4 Eggs

4 Pieces of cooked bacon or sausages (pre-cooked)

1 Green onion cut small

¼ Cup of small-diced tomatoes

(Optional additions of green, red and yellow peppers to taste)

1 Tablespoon margarine (or butter)

Ketchup

Mayonnaise

Salt and pepper to taste

Cheese (your favorite kind)

2 Large soft tortilla shells


Note: this is a great way to hide veggies so the kids will eat them and not know they did!


Directions:

In a small bowl, beat eggs until blended. Add the chunks of cooked bacon or sausage, green onions, tomatoes, (optional peppers), salt and pepper to the blended egg mixture. Heat frying on medium heat melting margarine (or butter), add your egg mixture and stir until completely cooked. Place tortilla shell in microwave and heat for 25 seconds, this allows the shells to be rolled without breaking. Spread the mayonnaise on the heated shells and spoon half of your cooked egg mixture in the middle of one shell and half in the other shell. Squeeze some ketchup on the egg mixture and add a couple slices of cheese to taste. Now comes the fun part, rolling the shells. Fold the sides into the middle. Fold the bottom over the sides already in the middle and roll towards the top. Put the rolled shell on a plate and put in the microwave for 20 seconds till cheese is melted.

Congrats! You have just made a healthy breakfast that your kids will eat and like.
